... and to drink and, why not?... to indulge! Every man and woman who contributed to form what, today, we call civiltà, civlization ate, drank, indulged. Without them, we wouldn't have the art, the architecture, the world in which we live today!

The food and drink of Tuscany have their roots in the world of the people who lived, loved and worked here thousands of years ago. It is the sum of centuries and centuries of life - growing, cultivating, experimenting... bending to new influences, holding out against others... refining. The cuisine of Italy distinguishes itself for its regional characters, its dependance on the availability of only the freshest seasonal ingredients and it's presentation of natural flavors, simply combined.

Chef Antonio Alfani's 'Cooking in Chianti' kitchen is in the most beautiful corner of this most beautiful region. Come and learn with him to prepare a real Italian meal. We say "learn with him" because your experience will be one of total involvement and participation in its preparation.

Chef Antonio's classes range from a full four-course Tuscan pranzo to typical meals from Italy's many and varied regions. Meals includes an antipasto, a first course, a second course with side, and a dessert. Several wines are always selected to best accompany your meal and are representative of the best of Italian wine making.  Special classes are offered that focus on desserts from the simply traditional to the sumptuous, or on the prepartion of voluptuous chocolates that often incorporate some of Italy's finest wines and liquers.

Participants to Chef Antonio's cooking classes learn by doing. They participate in every phase of the meal's preparation, from chopping and slicing to the actual cooking and presentation of the food.  And then when it's all ready... everyone sits down to the convivial tuscan table to enjoy the fruits of their labor together! We raise our glasses of Chianti Classico to our new friends. Our meal is the backdrop for...  La Civiltà a Firenze!
